Maryam's Pumpkin Soup

INGREDIENTS

750g (one medium) pumpkin- you can use butternut (sweater) or regular pumpkin
2 onions (or 2 leaks)
4 cups of water
4 cubes halal stock (be careful if you are using chicken stock that it is halal)
2 cups milk (you can use 1 cup yoghurt or cream if you like) optional salt, pepper, sugar.

METHOD
1. Boil up all ingredients, after chopping into small pieces, except for the milk, which you add at the end. Ensure you take the skin off
the pumpkin and onions.
2. When soft, blend all ingredients so that you have a smooth liquid.
3. Put back on the heat and add milk/yoghurt/cream.
4. Serve hot but do not bring to the boil.

 

APPETISERS
Baba Ghanooge

An eggplant based dip that is rapidly gaining in popularity. The mixture of baked eggplants, Tahini, and garlic make a wonderful tasting
dip. If you had wondered how to prepare those large eggplants you find in the supermarket, Baba Ghanooge is the answer!

INGREDIENTS
1 large eggplant
2 cloves garlic
2 tablespoons Tahini
1/4 teaspoon salt
1 tablespoon lemon juice
1/2 cup yogurt
3 tablespoons olive oil
several whole olives

METHOD
1. Heat oven to 400 degrees
2. Place whole eggplant on a baking sheet and bake until outer shell is crisp and inside is soft and mushy. A fork should pass easily through
the eggplant when done (about 1 hour).
3. Let the eggplant cool, then remove and discard black skin and green cap. Spoon the insides into a food processor or a blender.
4. Add garlic, Tahini, salt, lemon juice and yogurt. Puree until creamy.
5. Spoon into a serving dish and garnish with olive oil and whole olives.
6. Serve cold or warm with sliced Pita bread and/or vegetables for dipping.

Caesar Salad
My version of the restaurant classic is made with homemade garlic croutons.

Yields: 4 main-dish servings
Work Time: 20 minutes
Total Time: 20 minutes

INGREDIENTS
2 small garlic cloves
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1/2 teaspoon anchovy paste
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
3 tablespoons olive oil
1/2 loaf French bread (4 ounces)
12 ounces skinless, boneless rotisserie chicken, cut into thin strips; thinly sliced deli roast beef, cut into 1/2-inch-wide strips
12 cups loosely packed bite-size pieces romaine lettuce or other favourite lettuce (about 1 pound)
1/4 cup grated Parmesan cheese (ensure there is no animal rennet in the cheese)

METHOD
1. Into large salad bowl, crush 1 garlic clove with garlic press. With wire whisk, mix crushed garlic with lemon juice, Worcestershire,
mustard, anchovy paste, salt, and pepper until blended. Slowly whisk in 2 tablespoons olive oil until dressing thickens slightly; set aside.

2. Preheat broiler. Cut bread horizontally in half. Brush cut surface with remaining 1 tablespoon olive oil. Place bread, cut side up, on rack in broiling pan. Place pan in broiler 5 to 7 inches from source of heat and broil bread 2 to 3 minutes, until lightly toasted.

3. Cut remaining garlic clove lengthwise in half. Rub cut sides of toasted bread lightly with garlic clove halves; discard garlic. Cut bread into 1-inch cubes to make croutons; set aside.

4. To serve, add chicken, beef, or shrimp to dressing in bowl; toss to coat. Add lettuce, garlic croutons, and grated Parmesan; toss again.

Each serving: About 390 calories, 33 g protein, 20 g carbohydrate, 20 g total fat (5 g saturated), 82 mg cholesterol, 720 mg sodium.
