Brambling Cross 5.0 - 7.0 2.5 - 3.5 UK Acceptable general-purpose aroma hop but lacking the fineness of Goldings aroma. Quite mild and not unpleasant, fruity currant aroma. Good all around English hop.ESB, Bitter, Pale Ale. UK Kent Goldings, UK Progress.
Brewer's Gold 5.5 - 6.5 2.5 - 3.5 GER Mainly used as a bittering hop. Black current, fruity, spicy aroma. Ales, heavier German style lagers. Example: Pete's Wicked Ale Northern Brewer, Galena, Bullion.
Bullion 6.5 - 9 3.2 – 4.7  UK Bittering, poor aroma hop. Intense, black currant aroma, spicy and pungent. Stouts and Dark Ales. Northern Brewer and Galena
Cascade 4.5 – 8 4.5 - 7 US Flavour and aroma, bittering. Dry hopping for American style ales.Ales and lagers. Strong spicy, floral, citrus (especially grapefruit) aroma Example: Sierra Nevada Pale Ale, Anchor Liberty Ale & Old Foghorn Centennial
Centennial 9.5 – 11.5 3.5 – 4.5 US Aroma. Medium with floral and citrus tones. Medium to Dark American Ales. Cascade.
Challenger 6.5 – 10 4 – 4.5   Aroma and bittering Mild to moderate aroma, quite spicy, fruity flavour. British style Ale, Porter, Stout, ESB Bitter. Example: Fuller's ESB Northern Brewer, Perle
Chinook 11 - 13 3 – 4 US Strong bittering ability. All American lagers and ales. Very bitter. Mild to medium-heavy, spicy, distinct pine aroma. All American lagers and ales. Example: Little Creatures Pale Ale Galena, Cluster, Nugget
Cluster 5.5 – 8.5 4.5 – 5.5 AUS Floral Bittering with good flavour. Excellent general purpose. Good for Dark beers. Galena, Chinook.
Columbus 14 – 16 4.5 – 5.5 US Aroma Bittering, good flavour.    
Crystal 2 – 5   US Aroma, finishing, flavouring. Mild, pleasant, slightly spicy.   Hallertauer Hersbrucker, Mount Hood, Liberty.
Eroica 10 – 14 4 – 5.5 US Strong aroma. Bittering. Pale ales, dark ales and Stouts Chinook, Cluster, Galena, Nugget.
Fuggles 4 - 5.5 1.5 – 2 UK Finishing, dry hopping. Mild and pleasant, spicy, soft, floral, woody aroma. Traditional British brown ale & stout hop. Bittering (low) & aroma hop. Mild to strong flavour. English ales, Pale Ales, Porters, Stouts. Example: Samuel Smith's Pale Ale, Old Peculier, Thomas Hardy's Ale, Sam Adams Boston Ale. Willamette, East Kent Goldings, Styrian Goldings.
Galena 12 – 14 7 – 9 US Bittering. Medium aroma, very bitter Medium aroma, very bitter Nugget, Cluster, Chinook.
Green Bullet 10 - 11   NZ Bittering. Very bitter.    
Hallertauer Aroma 4.5 – 5.5   GER Aroma. Excellent aroma, spicy flavour. Traditional lager. Example: Coors Hallertauer Hersbrucker, Tettnanger, Crystal
Hallertauer Hersbrucker 4 - 6 3.5 – 5 GER Bittering and particularly finishing. Pleasant, spicy/mild, noble, floral, earthy aroma, mellow flavour. Ales, Altbiers, Belgian ales, and German style lagers. Example: Sam Adams Boston Lager (as substitute for Hallertauer Mittelfrueh). Hallertauer Mittelfrueh, Mt. Hood, Liberty, Crystal.

Example: Samuel Smith's Pale Ale, Fuller's ESB, Sam Adams Boston Ale Goldings (British Columbia), Fuggles, Target, Willamette.
Liberty 2.5 – 5 3 – 4 UK Finishing. Fine, very mild aroma American and German ales and lagers. Example: Pete's Wicked Lager Hallertauer, Mt. Hood, Crystal.
Mt. Hood 5 – 8 5 – 7.5 US Aroma and flavour. Mild, pleasant, clean, light, and delicate aroma. Resembles Hallertauer. German style lagers. Example: Anderson Valley High Rollers Wheat Beer, Portland Ale Hallertauer Hersbrucker, Liberty, Tettnanger, Crystal.
Northdown 7.5 - 9.5 5.0 - 5.5 UK A true dual-purpose hop with moderate bittering potential and excellent flavour/aroma characteristics. Fruity with some spicy aromas, excellent flavour properties. All Ales, Porters. Example: Fuller's ESB Northern Brewer?
Northern Brewer 6 – 10 3 – 5 GER Bittering and finishing for a wide variety of beers. Fine, fragrant aroma. Dry, clean bittering hop. Steam beers, Dark English ales, and German lagers. Phoenix 8 - 12 4.2 - 5.5 UK Mainly used for bittering but occasionally aroma. Crisp clean bittering hop and a very pleasant, attractive English aroma. English ales. Challenger
Pride of Ringwood 7 - 12   AUS Bittering. Clean bittering with citric aroma. Example: Foster's Lager, Victoria Bitter, Coopers Sparkling Ale Galena
Progress 5 - 7.5 2 - 2.5 USA A robust hop aroma type with moderate bittering potential.   British Ale, Bitter, ESB, Porter. Example: Hobsons Best Bitter, Leatherbritches Belter, Mansfield Bitter. UK Kent Goldings, Fuggles.
Saaz 2 – 5 3 – 4.5 CZ Finishing for Bohemian and Continental lagers. Delicate, mild, floral aroma. Bohemian-style beers, Continental lagers, Wheats, Pilsner lagers. Example: Pilsner Urquell Tettnanger (maybe).
Simcoe 12 - 14 4.5 - 5 USA Bittering and aroma. Citrus flavours; conifer, floral and citrus aroma. IPA, American PA, ESB. Chinook?
Spalt 6 - 7.5   GER Aroma, finishing, flavouring, some bittering Mild, pleasant, slightly spicy Dusseldorf Altbiers Saaz, Tettnanger
Stickelbract 9 - 11   NZ   Very bitter.    
Styrian Goldings 4.5 - 7 2 – 3 YUGO Bittering, finishing, dry hopping. Delicate, slightly spicy, soft and floral. Similar to Fuggles. English style ales, Vienna/Oktoberfest lagers, Belgian ales, Pilsners. Example: Ind Coope's Burton Ale, Timothy Taylor's Landlord Fuggles, Willamette.
Target 9.5 - 12.5 5 - 5.5 UK A good high alpha variety with an acceptable to desirable kettle hop aroma. Pleasant English hop aroma, quite intense. Normally used for bittering. Has acceptable aroma. Example: Fullers ESB Fuggles, Willamette.
Tettnanger 3 - 6 3 – 4 GER Finishing for German style beers. Fine, very spicy, mild, floral, and very aromatic. Wheats and lagers. Example: Gulpener Pilsner, Sam Adams Lager & Octoberfest, Anderson Valley ESB Saaz, Spalt
Willamette 4 – 7 3 – 4 US Finishing, dry hopping. Mild, spicy, grassy, floral aroma. American and British Ales. Example: Sierra Nevada Porter, Ballard Bitter, Anderson Valley Boont Amber Fuggles, Styrian Goldings, Kent Goldings
