COCOA and CHOCOLATE

Since late 2003, a great deal of my time has been spent learning how to make chocolate, and visiting cocoa-growing countries (such as Sri Lanka, Vanuatu, and Ecuador). My ultimate goal is manufacture commercial quantities of chocolate from the bean. In the meantime, my latest project can be found at www.chocolatereview.com.au.

Chocolate Review is an Australian resource for chocolate enthusiasts and connoisseurs. It provides a wide range of chocolate-related reviews and information, as well as a small online shop where you can buy selected chocolate bars from French manufacturers Valrhona and Michel Cluizel, as well as other brands such as Green & Black's (all certified organic), Dolfin, and Duchy Originals.
