| GLUTEN-FREE FRUITY CHEWS These are easy to make, and if you don't have all the ingredients, don't worry -- you can simply vary the recipe to suit your cupboard, or your taste buds.
Method: Mash the tofu and blend with oil and fruit juices. Add everything else except the coconut and mix well. If it's too dry, add more fruit juice. Roll into walnut-sized balls. Roll in dessicated coconut and refrigerate. Variations: Other ingredients to try -- dried apricots, dried mango, dates, your favourite liqueur and glace cherries.
